Kale Salad
(inspired by The Simple Gourmet)

Ingredients:

1 large bunch of organic Green Leaf Kale
2 large bunches of organic Purple Leaf Kale
¼ Sweet Onion
½ Cup Pinenuts (soaked for 2 hours)
¼ Cup Craisins or Raisins
3 TBSP Fresh Tarragon or 1 TBSP dried
3 TBSP Fresh Basil or 1 TBSP dried
Juice of one organic Lemon
3 TBSP Olive Oil
1 ½ tsp Sea Salt
1 tsp raw Agave Nectar
Garlic powder, cayenne and chili powder to taste.


Directions:
Gently pulse chop all the kale in a food processor and transfer to a bowl. To the kale add all the above ingredients and enough olive oil to saturate the greens. Toss and allow to marinate for 1 hour and serve!
