Creamy Cucumber Cilantro Soup
1 large English cucumber
½ cup water or coconut water
½ large avocado
1-2 cloves garlic
¼ tsp. cumin
½ lime – juiced
small handful of cilantro
¼ tsp. cayenne (or as spicy as you desire)
Blend all ingredients in a blender until smooth. Can serve immediately with garnish or store in a covered container in the refrigerator up to 3 days.

Chopped chives or green onion
Diced avocado
Chopped cilantro
Chopped cucumber
Daikon radish spiralized into noodles
Flaked seaweed
