Cashew Crème
Preparation: Soak cashews overnight. Drain.
Ingredients:
1 cup Cashews
1/2 tsp. Vanilla
3-4 Dates soaked in water (keep water)
Put cashews in blender with just enough of the date water to allow blender to do its job. Add only enough date water to make it smooth, then add dates one at a time, taste for sweetness. Add vanilla and blend. You want to achieve a fluffy whipped-cream type consistency.
1 cup of cashews will make 1 1/2 or more cups of cashew crème
